Salt Mackerel Cook- Up

Ingredients
1 Large Mackerel (pickled)
2 cups tomato (wedges)
½ cup onion (rings)
3 tbsp scallion (chopped)
1 tbsp garlic (chopped)
1 tsp hot pepper (chopped)
1 tsp black pepper
Thyme (sparing)
1 cup sweet pepper(julinne)
3 tbsp vegetable oil
2 tbsp vinegar/lime juice
½ tsp pimento
½ cup water/stock
Preparation
1) Soak mackerel in vinegar water overnight,
pour off and rinse.
2) Scald and rinse. Debone and flake or cut into
stakes.
3) Sautee half of the vegetable for 2-3 minutes
4) Lay steaks of mackerel on top of sautéed
vegetables and add remaining vegetables.
5) Pour ½ cup water/Stock and allow to cook for 5
minutes.
6) Remove from flame and rest for 2 minutes before
platting. Enjoy!
